
NASI ULAM
Ingredients
2kg cold cooked rice
3 tablespoons sambal belacan
1 salted egg, minced
6 shallots
50g salted kurau fish, fried and pounded
2 kembung fish, grilled and filleted
125g fried coconut
3 kasturi lime
1tbsp kerisik (fried desiccated coconut)
Finely slice the following ingredients:
1cm ginger, peeled
½ wild ginger flower (bunga kantan)
30g each pucuk selom, kaduk leaves, ulam raja
30 polygonum leaves (daun kesum)
3 turmeric (kunyit) leaves
2 stalks lemon grass
Method
Obtain the juice from the kasturi lime. Just mix all the ingredients in a bowl and – voila! – it’s time to dig in.
